As the calculation of the dry matter content of yoghurts and fermented milks requires the titratable acidity value of the product, this criterion will be a combined dry matter / acidity criterion for which a performance evaluation will be carried out for each element. : dry matter and acidity. You will therefore receive two results sheets to complete: - A results sheet for the dry matter of each sample (including the titratable acidity value in its calculation) - A results sheet for the titratable acidity of each sample
